Shelf Stable Cheese

Gilman Cheese produces a wide variety of cheese components for the gift pack, snack, school programs and airline industries that vary in weight from .5 ounces to 12 ounces. Our cutting operation allows us to shape cheese components into triangles, squares, bars, rounds and sticks. We also sell cheese sticks in bulk to customers for packaging in meat and cheese retail packages.

Shelf Stable Flavors

  • Bacon

    Is a down-home blend of natural Cheddar cheese and the finest real bacon. It's a country kind of taste perfect for melting over meat loaf, hamburgers, casseroles and baked potatoes.
  • Chipotle

    Is a unique blend of natural Cheddar cheese and southwest chipotle peppers. A great combination of smokey flavor and the heat of jalapeno peppers. One of our fastest growing flavors.
  • Garlic

    Is a unique blend of natural Cheddar cheese and garlic, perfect for use in garlic bread and lasagna.
  • Horseradish

    The distinct and delectable taste of horseradish gives our Horseradish Cheese its special goodness. It's a cheese with a definite presence and a flavor profile all its own.
  • Savory Onion

    Is a combination of savory onion and natural Cheddar cheese. Its mellow onion flavor and aroma are understated and is great on burgers and in salads.
  • Jalapeno Pepper

    Is Gilman's exciting blend of natural Monterey and Cheddar cheeses, and jalapeno peppers. It's fantastic grated on top of a bowl of hot chile or melted and poured on top of tacos, burritos and corn chips. It's our best seller!
  • Pepperoni

    Is a savory blend of natural Cheddar cheese and pepperoni. Try it in a hero sandwich or put it on a cheese tray.
  • Pizza

    Is a blend of Italian herbs, pimientos and natural cheeses with a zesty Mediterranean flavor. Adds interest to salads and cheese trays and is that something extra grated on top of a homemade pizza!
  • Salami

    Is a mixture of select natural Cheddar cheese and premium salami, it is a versatile favorite. It's a quick and nutritious snack, and makes a delicious grilled cheese sandwich.
  • Sharp Cheddar

    Is the Sharp version of Gilman's premium American produced from aged cheddar which gives it a bolder taste and a flavor that bursts on your tongue!
  • Smokey Cheddar

    Has the taste of Cheddar cheese blended with the flavor of real hickory smoke. Smoked to perfection in Gilman's very own smoke houses, it's our most popular smoked flavor. It's perfect for burgers or by itself.
  • Smokey Swiss

    Is our great tasting Swiss cheese and the flavor of hickory smoke from our very own smoke houses. Enjoy this gourmet cheese.
  • Swiss Caraway

    Is a classic combination of natural Cheddar cheeses and caraway. A definite must for every cheese tray.
  • Tomato Basil

    Is a mixture of natural Cheddar cheese, Italian spices, and sun dried tomatoes. Very popular in gift baskets.
  • Vegetable Fair

    Is an appetizing blend of nutritious natural Cheddar cheese and the wholesome goodness of vegetables. Vegetable Fair adds flair to garden salads and cheese trays.
  • Wisconsin Swiss

    Is a combination of natural Cheddar and Swiss cheeses. Its flavor is the perfect compliment to a ham on rye sandwich, grilled or otherwise. Try it melted as a fondue or sauce.

Shelf Stable Cheese Packaging Options

  • Tiromatt Packaging for Cheese


    Tiromatt packaging is our customer favorite because of the wide array of shape and size options and low cost. Tiromatt packaging provides an attractive, uniform sealed edge around the piece of cheese. Tiromatt packaging is a terrific option because of the printed film and label options that are available.
  • Cryovac Packaging for Cheese


    Cryovac packaging is desirable in some gift and retail components because of the clean package appearance with a seam on only one side. This more expensive packaging option does not allow for printed film, but the hand-applied label options are endless!

The possibilities are endless. We currently cut our shelf stable cheese into rounds, triangles, bars, sticks and squares in many size variations.


Shelf Stable Cheese Care Instructions

  • SHELF LIFE OF SHELF STABLE CHEESE: Twelve months; provided the cheese remains hermetically sealed and stored below 72 degrees F.
  • SHELF STABILITY NOTICE: Shelf Stable Cheese can be displayed at point of sale without refrigeration in normal store temperatures. Avoid displaying in direct path of heat outlets, in direct sunlight, or near other heat sources. During distribution and storage, we recommend cooler temperatures (35 – 40 degrees F) for the best flavor retention and shelf life.
  • SHIPPING INSTRUCTIONS: We require shipping processed cheese and shelf stable cheese under refrigeration at temperatures between 35 – 50 degrees F.
  • DO NOT FREEZE: Freezing processed or shelf stable cheese will adversely affect the quality of the cheese. Specifically, freezing this cheese will result in a soft, gummy body.
